1 pound sliced, cooked, corned beef brisket

½ teaspoon olive oil

16 slices rye bread of your choice

4 tablespoons butter, softened

1 cup (8 oz) sauerkraut, drained

16 slices Swiss cheese

½ cup creamy Russian dressing

What to Do

Heat oil in a skillet over medium-low heat; add the meat and cook just until heated through.
Butter one side of each slice of bread; place half the slices, butter-side down, in hot skillet.
Spoon dressing onto each slice in skillet; top with cheese, meat, and sourkraut, divided evenly.
Place remaining slices, butter-side up, onto each portion in the skillet.
Flip sandwiches over when bottom of first slices are browned (~3 minutes); cook until cheese melts and the bread is browned (~3 minutes more).
