Dirty Rice

What you Need

Cutting Board and Carving Knife

1 tablespoons olive oil

1 medium onion, diced

1 bell pepper, diced

1 rib celery, diced

3 cloves garlic, minced

2 teaspoons Creole or Cajun seasoning (or a mix of both)

½ teaspoon salt

1½ cups uncooked white rice

3 cups beef broth

What to do

What to Do

Heat oil over medium-high heat in a covered saucepan; add onion, garlic, bell pepper and celery; sauté ~5 minutes, until vegetables have softened.
Stir in Cajun seasoning, salt, rice and beef broth.
Bring to a boil; reduce heat to low and simmer covered ~25 minutes, or until rice is cooked.
Allow to sit for 5 to 10 minutes, then fluff with a fork.
Garnish with green onions or parsley before serving.
Mix and store this set of herbs and spices to have at the ready in future.
¼ teaspoon garlic powder ≈ 1 clove pressed garlic ≈ ½ teaspoon minced garlic

Note
The difference between Creole and Cajun seasoning blends is fairly subtle: Cajun seasoning typically contains black, cayenne, and white pepper; Creole seasoning typically contains all or some of these herbs: oregano, thyme, rosemary, and paprika
