What you Need

4 large eggs

¼ cup milk

2 tablespoons butter

1 large onion, diced

¼ pound (4 oz) ham, diced

1 green bell pepper, diced

½ cup (2 oz) cheddar cheese, shredded

¼ teaspoon salt

¼ teaspoon black pepper

8 slices bread of choice

2 tablespoons mayonnaise

What to Do

Cook bell pepper, onion and ham in a skillet over medium heat, until onion is translucent, stirring frequently.
Scramble eggs in small mixing bowl; add to skillet; stir as eggs fry; stir in cheese.
Lightly toast bread; spread mayonnaise on each piece.
Distribute egg mixture evenly on half of the slices; top each with remaining slices.
