Bruschetta

What you Need

Cutting Board and Carving Knife

6 (~12 oz) Roma tomatoes, diced

½ cup basil leaves, chopped

5 cloves garlic, minced

5 tablespoons olive oil

1 tablespoon balsamic vinegar

½ teaspoon salt

¼ teaspoon black pepper

1 (~9 oz) baguette

⅓ cup shredded Parmesan cheese

¼ cup balsamic galze

What to Do

Combine ~half the garlic and the olive oil; set aside.
Combine tomatoes, basil, vinegar, salt, pepper and remaining garlic and olive oil in a small mixing bowl.
Allow mixture to marinate ~30 minutes.
Cut baguette into ½-inch thick slices, diagonally.
Preheat oven to 400°F; brush both sides of bread slices with garlic/olive oil mixture; place bread slices snuggly on a lined or lightly sprayed baking sheet.
Spoon tomato mixture onto each bread slice.
Sprinkle each piece with Parmesan cheese; bake ~5 minutes.
Set oven to broil; broil ~2 minutes, until the edges are golden brown.
Transfer to a serving platter and drizzle with balsamic glaze; serve immediately.
