Mix all ingredients in a medium mixing bowl until smooth.
Heat a crepe pan (or an 8-inch frying pan) over medium-low heat.
Pour ~¼ cup batter into pan, tilt pan each way to form even circle.
Cook ~one minute per side, until lightly browned; repeat with remaining batter.
Stack crepes (wax paper between each crepe will prevent them from sticking together) on an oven-safe plate; keep warm in oven at 250°F while finishing the batter.
Serve flat with choice of add-ins, or roll up with chosen add-ins and serve.
