Frittatas

What you Need

Cutting Board and Carving Knife
Bowl
Whisk
Cooking Spoon
Muffin Pan

8 large eggs

½ cup half & half

½ teaspoon black pepper

¼ teaspoon salt

4 oz ham, chopped

⅓ cup grated Parmesan

2 tablespoons fresh parsley, chopped fine

What to do

What to Do

Preheat oven to 375°F.
Spray muffin tin with nonstick cooking spray.
Whisk the eggs, milk, pepper, and salt in a large bowl to blend well.
Stir in the ham, cheese and parsley.
Fill prepared muffin cups almost to the top with the egg mixture.
Bake until the egg mixture puffs and is just set in the center, ~15 minutes. The frittatas will collapse as they cool.
Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter.
Great recipe for leftovers!
1 tablespoon fresh herb ≈ 1 teaspoon dried herb

Variation You may wish to use a pie pan rather than a muffin pan; or use a mini muffin pan.
