4 large eggs

1 medium onion, diced

8 oz ground pork (½ lb bulk breakfast sausage)

8 oz potatoes, shredded

8 oz cheddar cheese, sliced or shredded

What to Do

Break eggs into a small mixing bowl; whisk vigorously; set aside.
Brown pork sausage in a large skillet over medium heat; break up as it cooks; drain any excess fat.
Add onions; sauté until softened and translucent, ~2 minutes.
Add potatoes; cook ~10 minutes, stirring occasionally.
Add scrambled eggs; cook ~3 minutes, stirring occasionally.
Add cheese, let melt; stir in, if desired.
Great recipe for leftovers!
