Spinach with Hot Bacon Dressing

What you Need

Cutting Board and Carving Knife
Whisk
Cooking Spoon

5 oz baby spinach, rinsed and dried

5 slices thick-cut bacon, fried to crispy and crumbled; reserve

¼ cup bacon drippings

1 tablespoon onion, chopped fine

¼ cup apple cider vinegar

1 tablespoon honey

½ teaspoon Dijon mustard

½ teaspoon salt

½ teaspoon black pepper

What to do

What to Do

Place reserved bacon grease in a skillet over medium-high heat.
Add onion to the skillet; sauté until tender (~2 minutes).
Whisk vinegar, honey, mustard, salt and pepper into the skillet, stirring until thickened.
Toss spinach with crumbled bacon.
Pour warm dressing over spinach just before serving.
