What you Need

Dressing

¼ cup olive oil

1 clove garlic, minced

2 tablespoons lemon juice

1 tablespoon balsamic vinegar

1 teaspoon honey

½ teaspoon salt

¼ teaspoon black pepper

Salad

2 cups cooked quinoa, chilled

2 cups (~2.5 oz) baby spinach, chopped

1 cup cucumber, diced

1 cup (~6 oz) grape tomatoes, halved

1 (~6 oz) avocado, diced

2 green onions (scallions), sliced

What to do

What to Do

Whisk together dressing ingredients; set aside.
In a large bowl, combine salad ingredients.
Just before serving, add dressing to salad; toss to coat thoroughly.
