Baked Chimichangas

What you Need

1 pound hamburger (ground beef)

1 tablespoon chili powder

½ teaspoon ground cumin

¼ teaspoon paprika

½ teaspoon salt

½ cup diced tomatoes

8 oz (2 cups) shredded cheese(s) of choice

2 oz cream cheese, softened

4 green onions, chopped (~2 tablespoons)

1 can (15 oz) refried beans

4 large flour tortillas

olive oil (or other vegetable oil)

What to Do

Preheat oven to 400°F.
Place hamburger, chili powder, ground cumin, paprika and salt in a large skillet on medium heat; break up hamburger and stir until the beef is browned. Remove from heat (if hamburger has high fat content, drain excess fat before proceeding).
In a medium sized mixing bowl combine browned hamburger, diced tomatoes, shredded cheese, cream cheese, and green onions.
Spoon and spread 2 tablespoons refried beans onto the tortilla 2 inches from the edge.
Add about ½ cup of the bowl mixture and put into the center of the tortilla. Fold in the sides of the tortillas and then roll up (see figure); place seam side down in a baking dish.
Brush the tops with oil. Bake for 20 minutes or until golden brown; serve with sides of choice.
