Vegetables

3 Roma tomatoes, diced

2 avocados, diced

⅓ cup red onion, diced

15 oz black beans, drained

15 oz black eyed peas

12 oz sweet corn kernels

1 bell pepper, diced

1 jalapeño pepper, seeds removed, diced fine

⅓ cup fresh cilantro, chopped fine, optional

Dressing

⅓ cup olive oil

2 tablespoons lime juice

2 tablespoons red wine vinegar

1 tablespoon sugar

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon garlic powder

What to Do

Combine vegetables in a large bowl; toss until well mixed.
In a separate bowl, whisk together dressing ingredients.
Pour dressing over vegetables; toss to coat.
